November is World Vegan Month and the shift toward conscious dining is unmistakable. According to a report by Coherent Market Insights, 61 per cent of 16–24-year-olds and 70 per cent of 25–34-year-olds in India now identify as plant-based eaters, and the vegan food market is projected to grow at 9.1 per cent CAGR from 2025 to 2032.
